Coconut Cinnamon Cupcakes





Ingredients:

¾ cup coconut flour

1 tsp salt

1 tsp baking soda

1 tbsp cinnamon

10 eggs

1 tbsp pure vanilla extract

1 cup pure maple syrup

1 cup melted coconut oil

1 cup shredded unsweetened coconut


Icing Ingredients:

16 oz cream cheese

8 oz butter

½ cup maple syrup

½ cup tapioca flour

1 ½ tbsp. pure vanilla extract


Directions:


1. Preheat oven to 325 degrees Fahrenheit.


2. In a small bowl, add sifted coconut flour, salt, baking soda & cinnamon.


3. In a large bowl or kitchen mixer, combine eggs, vanilla, maple syrup and melted coconut oil.


4. Add dry ingredients to wet and continue to blend.


5. Once batter is blended and smooth, stir in shredded coconut.


6. Grease cupcake pan or use cupcake papers. Pour batter evenly into cupcake sections.


7. Bake for approximately 20 minutes (test center of cupcake with a toothpick. If the toothpick comes out clean, the cupcakes are done) Remove the cupcakes from oven and cool.


8. In a large mixing bowl, blend all Icing ingredients until creamy. Frost cooled cupcakes.


Tip:

The cinnamon can be omitted.For chocolate cupcakes, add 1-2 tbsp cacao powder in step 2.

At Country Doctor Nutritional Center, we require all new clients to attend or watch our Introductory Class prior to their first exam. We believe pre-education is crucial to positioning the client to be successful. You can watch our Introductory class here:


This class has proven itself to be the most beneficial class I have ever executed in terms of providing new prospects an introductory explanation of my clinical specialties.


The class was developed in 2006 and is used exclusively by the Country Doctor Nutritional Center and its Interns as its primary outreach to potential customers. Currently, I conduct this class twice per month to explain the value of our services to potential clients. Even though I am always looking for additional ways to conduct lectures in our community, a similar class is a must for any nutritional therapy practice.


Prospective clients who attend this class are derived from existing clients who are referring family, friends and colleagues to our office. However, in the beginning of your business, you will need to discover other ways to draw prospective clients. Through our classroom time together, we will explore opportunities in your community such as churches, associations, Chamber of Commerce events, or host your own health and wellness fair, etc.

Before coming to the Country Doctor, I was taking sleeping pills each night. If I did not, I was up till 2:00 or 3:00 am. My headache used to last for days. My skin was so dry and flaky, when I undressed; it was like a snow storm. My hair was so oily. The ringing in my right ear drove me nuts. Because of Country Doctor, I now go to bed and go to sleep. Maybe once or twice I do not go to sleep until 2:00 or 4:00 am. My headaches come and go the same day. My skin feels so soft like a baby’s bum. My hair is so soft.
